Le sue caratteristiche sono state ottenute grazie ad un vigneto di 5,4 ettari situato in una zona collinare ad un’altitudine di 280-350 metri sul livello del mare, con una densità di impianto di circa 2.963/3.333 ceppi per ettaro e un suolo caratterizzato da sabbia pliocenica, limo e argilla.

Pignoletto Frizzante DOCG Colli Bolognesi is a unique wine that represents the essence of the territory in which it is produced.

Its characteristics were obtained thanks to a 5.4 hectare vineyard located in a hilly area at an altitude of 280-350 meters above sea level, with a planting density of approximately 2,963/3,333 vines per hectare and a soil characterized by Pliocene sand, silt and clay.

The vinification and refinement of the wine was taken care of down to the smallest detail, with a manual harvest of the grapes in 17 kg boxes, fermentation in stainless steel wine vessels at 20°C for 10 days, refinement for 3 months in steel and refermentation in an autoclave with the method Charmat.

The result is a wine with a pale yellow color with greenish reflections, with delicate, floral and fragrant aromas, and a slightly almondy and pleasantly sparkling taste.

Pignoletto Frizzante DOCG Colli Bolognesi goes perfectly with appetizers, first courses, fish, white meats, vegetables and eggs.

The vinification of Pignoletto Frizzante DOCG Colli Bolognesi involves manual harvesting in 17 kg boxes in mid-late September, followed by destemming of the grapes and skin maceration without the use of bisulphites.

The must is then cooled to 10C by static decantation and fermented in stainless steel wine vessels at 20C for 10 days with final tangential filtration.

The refinement takes place for 3 months in steel and the refermentation for 45 days in an autoclave with the Charmat method, preceded by low temperature fermentation.
