‘Sospiro’ represents a triumph of winemaking art, with a winemaking process that emphasizes the purity and essence of Trebbiano.
Starting from the manual harvest, the grapes undergo direct pressing which expertly separates the free-run must from the second press, guaranteeing maximum quality.
After a delicate static decantation, the free-run must advances towards fermentation at controlled temperatures between 12-14C, a crucial detail that preserves the natural fruity aromas and distinctive freshness of the wine.
Aging on the yeasts in stainless steel tanks for four months, followed by second fermentation in an autoclave, completes the process, giving ‘Sospiro’ its effervescent signature and refined texture that delights the palate.
‘Sospiro’ flourishes in its exclusive location on the hills of Mazzolano in Riolo Terme, an area that gives it an unmistakable character thanks to its unique terroir.
The Trebbiano vineyards, carefully planted in 2013, grow lush at an altitude of 150-200 meters above sea level, in an environment enriched by western exposure and the temperate climate of the Ravea region.
The soil, located in the renowned Romagnola chalk vein, has a clayey composition enriched with limestone and potassium, elements which together stress the vines, intensifying the flavors and aromas of the grapes.
This symbiosis of geographical and geological factors gives ‘Sospiro’ a complexity of flavors and an aromatic profile that not only reflects the richness of its habitat, but also celebrates the history and culture of its native landscape.
