Description
The creation of ‘Peritivo’ follows careful winemaking that begins with the manual harvesting of Trebbiano, Pinot Bianco and Traminer grapes from late August to early September, ensuring the acquisition of the distinctive flavors of each variety.
The grapes are then pressed directly, with a meticulous separation of the free-run must, preserving the freshness and integrity of the flavours.
After a light static decantation, the must is subjected to fermentation at controlled temperatures of 12-14 C, a step that emphasizes the fragrance and aromatic complexity of the wine.
The second fermentation, carried out in an autoclave following the Charmat method after a brief refinement, gives ‘Peritivo’ its lively effervescence and sparkling character, making it an ideal companion for aperitifs and celebrations.
‘Peritivo’ has its roots in the fertile soils of Riolo Terme, Ravea, a place where winemaking tradition blends with a unique terroir.
Our vineyards, planted in 2017, extend over 3 hectares and enjoy ideal south-east sun exposure.
Located at a strategic altitude of 150-230 meters on the hills of Mazzolano, the vineyards thrive on medium-textured clay soil, enriched with limestone and potassium, fundamental elements of the historic Romagna chalk vein.
This environment, with its particular microclimatic conditions, not only nourishes the vines, but also contributes to defining the taste profile of ‘Peritivo’.
