The creation of ‘Paggetto’ follows a meticulous winemaking process that enhances the quality and individuality of Grechetto Gentile, a grape variety that tells the story of its terroir.
Starting with the manual harvest of the grapes at the end of August, each phase is taken care of down to the smallest detail.
The grapes are delicately pressed, separating the free-run must from the second press in order to preserve the purity and freshness of the aromas.
This is followed by static decantation which prepares the must for fermentation at controlled temperatures of 12-14 C, a crucial phase which maintains the aromatic complexity and liveliness of the fruit.
The refinement, which takes place on the yeasts in stainless steel tanks for approximately four months, allows the wine to develop a rich texture and a deep flavor.
The second fermentation in an autoclave is the final masterful touch, giving ‘Paggetto’ its distinctive, lively but balanced effervescence, and a palate that captures the essence of the grape variety and its environment, seducing wine lovers with its elegance and complexity.
‘Paggetto’ rooted in the fertile soil and winemaking tradition of Riolo Terme, Ravea, a place where the vine and the land coexist in perfect harmony.
Our Grechetto Gentile vineyards, planted with dedication in 2017, now cover an area of 3 hectares and enjoy optimal south-east exposure, absorbing an abundance of sunshine and benefiting from the area’s unique microclimatic conditions.
Located between 150-230 meters above sea level on the picturesque hills of Mazzolano, the vineyards are nourished by medium-textured clay soil, rich in limestone and potassium, distinctive elements of the famous Romagna chalk vein.
This combination of geographical and geological factors not only offers ideal conditions for vigorous growth of the vines and optimal ripening of the grapes, but also helps to form the distinctive character of ‘Paggetto’.
Every sip of this wine is a tribute to the richness of the landscape, a gustatory experience that transports you directly to the heart of Romagna, celebrating the region in its sensorial entirety.
