Merlino – Ravea PGI Merlot, the result of meticulous winemaking.
After a scrupulous manual harvest, the Merlot grapes undergo delicate destemming and pressing. Fermentation takes place in stainless steel tanks at a controlled temperature of 26-28C, ensuring the preservation of the primary aromatic profiles.
A prolonged maceration on the skins for over 30 days allows the optimal extraction of color, taini and phenolic compounds, followed by malolactic fermentation which contributes to the complexity of the taste.
The refinement, partly in second passage barriques and partly in concrete tanks for 12 months, gives structure and harmonizes the aromatic bouquet.
Immersed in the evocative setting of the Mazzolano hills, the Merlino – Ravea PGI Merlot is the result of a unique territory.
The area, known for its historic Romagna chalk vein, offers medium-textured soil, predominantly clayey and generous in limestone and potassium, elements that contribute to the richness and complexity of the wine.
At an altitude varying between 150 and 230 metres, the vineyards enjoy an ideal microclimate, characterized by sunny days and regular breezes, which guarantee optimal ripening of the grapes.
These factors, combined with the south-west exposure of the vines, allow the Merlot to express its identity, rooted in the tradition and landscape of Riolo Terme.
The choice to cultivate less than one hectare underlines the commitment to attention to detail and limited production, aimed at excellence.
