The birth of ‘Custos’ follows a meticulous winemaking process that respects the nature of Grechetto Gentile, a variety that fully expresses its identity through this wine.
Starting from the manual harvest of the grapes at the end of August, each phase is taken care of down to the smallest detail to preserve the integrity of the fruit.
Direct pressing, which precisely separates the free-run must from the second press, is the first step towards the creation of this exceptional wine.
A static decantation follows, preparing the must for fermentation at controlled temperatures of 12-14 C, essential for maintaining the aromatic complexity and freshness of the wine.
Aging on the yeasts in stainless steel tanks for approximately four months enriches ‘Custos’ with a smooth texture and a depth of flavor that resonates with every sip, while its still nature retains the pure essence of Grechetto Gentile.
‘Custos’ deeply rooted in the rich and historic land of Riolo Terme, Ravea, where each vine grows in symbiosis with the surrounding landscape.
Our Grechetto Gentile vineyards, established in 2017, extend for 3 hectares and benefit from optimal sun exposure to the south-east, which contributes to the harmony of the grapes.
Located at an altitude of 150-230 meters on the hills of Mazzolano, these vineyards thrive on medium-textured clay soil, enriched by limestone and potassium, elements that define the historic Romagna chalk vein.
This unique environment not only offers ideal conditions for viticulture, but also imbues each bottle of ‘Custos’ with an unmistakable character, combining the uniqueness of the territory with winemaking mastery for a sensorial experience that celebrates the true essence of Romagna.
